Robin Hood's Ribs


How this recipe came to be...

One day Robin got really hungry for barbecued back ribs and sent his men out for wild boar. While they were out they came across Friar Tuck, who was bringing a fresh load of wine back to camp. Everybody sat down to rest and refresh them selves and by the time they were done they were so far gone that they could no longer shoot straight. When a hapless farmer, Simon the Simple by name, came along with a fresh killed pig to give to his landlord they decided it would be easier to relieve him of the pig than to catch a boar. They were at least gracious enough to invite him to dinner. You should be that gracious too. This can be a social event unto itself. Get some good wine, invite some good friends, put on some good music. Start about 4 or 5 pm. Get some Italian bread and make some honey butter. Roll on through the night.
Ingredients

2 cups catsup
½ cup dark karo syrup
2 tbs worcestershire
2 tbs soy sauce
1 tsp dry mustard
1 tsp curry powder
1 tsp basil
½ tsp chili powder
1 huge clove of garlic
1 whole large onion, chopped
1/3 cup brown sugar
¼ cup red wine or beer, ale, stout, porter, etc.
any fresh herbs that go in tomato-based sauces (basil, oregano,thyme)
What to do...

Simmer all together on low heat for 30 minutes, stirring occasionally. Use now or freeze for later. Precook spare ribs in the oven at 350 F for 30 minutes and drain off fat. Turn oven up to 400 (or stoke the fire up real good). Baste ribs with Robin Hood's sauce and bake for 2 hours, turning and basting every half hour or so.

Make sure these are done before eating and then…. oh, wow. I am speechless. These are the best ribs I ever ate.
