I am strongly interested in becoming apprenticed to a Brewing & Vintning
laurel. I have spoken to several laurels in my region (read driving
distance from Manitowoc, WI), but they were not willing to take on
additional apprentices due to outside complications. Therefore, I have
widened my search.
My focus has been on spiced cysers in the past. I feel I have reached a
point where I can consistently get good results, and reproduce my results.
I have also focused on non-chemical additives in my brewing because I have a
serious allergy to sulfites. :(-
I would appreciate some help with my worst weakness (documentation), and
some advice on what steps I should take next. Please feel free to send
