Yes, you can make ink and dye from acorns. There's just more tannin in the
galls from oak trees, as the galls are the trees way of trying to protect
itself from an invader - thus, it puts more of the 'poison', if you will,
in those. It will be a lighter ink, but it'll work. You can also make ink
and dye from the bark and leaves of these trees. Just takes more time, is
a bit more difficult and not quite as dark as if you use the traditional
portions from the tree to do so.
Same theory applies to herbs. Horshradish leaves, and the root, become
more bitter when they have been munched by insects. This is because the
plant knows it's being attacked and puts out more of the chemicals (we find
so yummy) that generally repulse those invaders.
