Gods and Myths of Northern Europe by H.R. Ellis Davidson. Originally
published in 1964, my copy is a Penguin paperback reprinted in 1981.
 Davidson mostly concentrates on the Norse mythology, but also addresses
the related beliefs of Germanic tribes. Not everything you want, it
sounds like, but a start.

Davidson was a much-published English scholar, and she seems quite
reputable.
