You can build a non-durable target from 2x4's. Cut 6" length of 2x4
and put it together with the ends facing out. Sandwich several layers
together. Doesn't last long, though.
Where I live, I have found people willing to give up a stump when I
see trees being cut down. I explain what I need them for and the
people usually find it "cool" and "would love to see that!" When you
really want to do a hobby, you find yourself being less shy about
stopping to ask a stranger for a stump.

Practice more. Axes are supposed to be blade heavy. A throw of an
axe involves a steady acceleration towards the target with a firm
grip, but loosening up that grip by the time you release so as not to
hinder the handle's spin. When you are practicing, only correct one
thing at a time. Use the same foot positioning from throw to throw,
same release style throw to throw, etc. Even keeping your thumb up
across the top of the handle, or down in a "hammer" grip should
remaining consistent. If the axe is not sticking and it hits handle
first, you are too close, move back half a step. If it hits with the
top/back of the axe head, you are too far away...move half-step
closer.

I have not used bayonets for spear blades, but I have thrown them like
knives. They are too unbalanced for knife-like throwing. They will
probably work great for a spear.
