The Undiscovered Country, Untranslated Manuscripts Regarding Cuisine from Italy 14th - 16th century
The cuisine of Italy still remains largely unexplored within the SCA, in comparison with that of England. This is in part due to the lack of translated manuscripts. This class will introduce students to the large number of excellent recipe, agriculture and health books in Italian. These books offer a unique and valuable resource to all cooks hoping to graduate from cooking almost exclusively from the Forme of Curye or secondary sources.
Class handouts will include a bibliography, translated recipes and menus from selected documents.
Cost per student: 50c per student to cover photocopy costs. 1 hour
